Chef Gaëlle offers a high quality selection of homemade dishes, with a particular focus on food and wine pairings. G.B.P. utilises a wide range of local, seasonal, organic, and protected designation of origin products. All the bread served is organic. She adapts her cooking for every possible taste and dietary requirement: vegetarian, vegan, gluten-intolerant... Groups can book the "private table" with a week's notice (only one group can be catered for at any one time). From the "private table" to the cooking classes, visitors are invited to step behind the scenes, and learn more about the chef's expertise and professional techniques.

The menu is made up of authentic médocain delicacies: hare à la Royale or en civet, woodpigeon flambéed in cognac, lamprey à la bordelaise, blueback herring, ceps, and persillades. The Margaux restaurant's menu is seasonal, with ingredients sourced from the local market: line caught eels and bass, rack of lamb, turbot, foie gras, truffles and duck breast... "Bistro" and traditional menus are available, as well as a fine selection of chef's specials. At the restaurant's wine bar, you can choose from an excellent list, including some wonderful vintages from the Margaux appellation and hundreds of other references.
